We don't realize just how simple healthy eating can be. I thought I'd share one of my go to quinoa salad recipes, that can be had as a side or a meal!
!/2 cup of cooked quinoa
¼ cup of black beans
¼ cup of corn
¼ cup of chopped pepper
¼ cup of chopped tomatoes
¼ cup of freshly chopped parsley
1tbsp of olive oil
1 tbsp of lemon juice(can adjust according to your taste buds)
salt and pepper to taste
Mix all of the above together and Enjoy!
It's that easy!
