Delicious Bean Salad (4 Servings)

INGREDIENTS:

1 cup of mixed beans

½ cup of frozen corn, defrosted

½ cup of cherry tomatoes

2 cups of any leafy chopped greens

2 tbsps Balsamic vinagarette dressing in a strainer to remove excess salt:

4 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

1 cup of grilled tofu:

1 pack of firm tofu

1 tbsp of olive oil

1/2 lemon, juiced

5 tbsp of chopped cilantro

2 tbsp of chili powder

Salt and pepper to taste

 

 

METHOD:

Grilled Spicy Tofu

1. Drain the tofu and wash in a strainer under running water.

2. Place in a thick kitchen paper towel and place a heavy object   on top to drain excess water.

3. After 10 minutes later, remove the weight and cut tofu into small pieces.

4. Make the marinate whilst the tofu is being drained.

5. In a small bowl add in all the ingredients for the marinate and mix with a small whisk.

1 tbsp of olive oil

1/2 lemon, juiced

5 tbsp of chopped cilantro

2 tbsp of chili powder

Salt and pepper to taste

6. Place tofu in a bowl and pour the marinate on top and mix slowly to cover the tofu.

7. Cover the bowl with a plastic wrap and let sit in fridge for about an hour.

8. Switch the oven on to broil.

9. Place the tofu on to a oven proof dish and spread to make a single layer.

10. Broil. Keep an eye on this as you don’t want it to burn (about 3-5 minutes).

 

Balsamic Vinaigrette

1. Add all the ingredients and whisk:

4 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

 

Assembling the salad

1. Drain an wash canned beans to remove excess salt

2. In a large salad bowl add in the can of mixed beans

3. Add in the corn, cherry tomatoes cut in  halves.

3. Add the chopped greens

4. Add in the grilled tofu

5. Just before serving add in the balsamic vinaigrette

6. Mix all well and serve
